Morning ALF, Here is the jerkey recipe. You can use less or more black pepper If you want it hot add more hot sauce. You will need the following. 3-4 lbs lean beef or venison (Top Sirloin works really well as does flank steak. (should be at least 1" thick. 1 cup soy sauce, 1/2 cup worcestershire sauce, 1/2 cup cup dry white wine or cooking sherry, 1/4 cup chipolte bar b q sauce, 1/4 cup white sugar, 1 tablespoon black pepper, 1 1/2 tablespoon tiger sauce. Louisiana hot sauce. (ammount is upto you, (caution it reacts very explosivly with the tiger sauce and black pepper) Heat the mixture over low heat do not boil to disolve and liquify the contents. cut meat into thin slices with the grain marinate the meat in the mixture turning every 3 hours for 12-24 hours. remove the meat and let drain then place on the grill cooking at low heat (180 is good smoking it for 6-12 hours. Jerkey is done when it no longer feels soft. longer smoking yields drier jerkey. Enjoy, Amigo. Walt
